Ingredients & Preparation – Zucchini Crust with Quiche Lorraine

For Zucchini Crust

  • Drained and Squeezed 3 ½ cups shredded Zucchini
  • Lightly beaten, 1 large egg
  • Grated Parmesan Cheese, 2 tablespoons
  • ½ teaspoon salt
  • McCormick Sea Salt Grinder 2.12 Oz
  • ½ teaspoon ground pepper

For Filling

  • Wilderness Lite Cherry Pie Filling or Topping 20 Oz
  • Cooked and Chopped, 5 Slices of Bacon
  • ¾ cup Jarlsberg Cheese shredded
  • 2 Scallions finely chopped
  • Large 5 Eggs
  • 1 Tablespoon Sour Cream
  • Low-fat milk – 1 Cup
  • Teaspoon Salt ¼
  • ½ teaspoon ground pepper
  • ½ teaspoon ground nutmeg


Preparation time – 30 Minutes

Ready in – 1h 30m

For Zucchini Crust:

  • Preheat oven to 400-degree F.
  • Prepare to coat a 9-inch-deep pie pan with cooking spray.
  • Stir together with Zucchini, 1 egg, Parmesan, ¼ teaspoon salt and ½ teaspoon pepper in a bowl.
  • Mix it well and transfer the mixture into the pan and press it to the bottom and up to the sides of the pan.
  • Now, bake until the crust is set and beginning to brown around the edges of the pan. Approx. 25 minutes.

For Quiche Lorraine

  • Evenly scatter bacon, Jarlsberg and Scallions over the Zucchini crust.
  • Stir the eggs and sour cream together until it gets smooth.
  • Stir with milk, salt, pepper and nutmeg.
  • Pour the mixture of egg over the filling ingredients.
  • Lower the oven temperature to 350-degree F.
  • Now, bake the quiche until the filling is set in the center and beginning to brown slightly till 35 to 45 minutes.
  • Let it cool the filling before serving.
